As anybody who interacts with me on Facebook knows, I am an ardent home cook. Living just a few miles from the Gulf of Mexico (as the crow flies!) we are blessed with fresh fish, crawfish, shrimp, oysters and even alligator, which I happen to love!
I often post my lunch or dinner ideas on FB and some friends and I even have a monthly “virtual” lunch or dinner date where we share our ideas for recipes and beverages. We have a wonderful time and get to learn about new foods from different parts of the country.
For instance, one of my FB friends referenced EVOO the other day. I had to admit that this was a new one for me. My friend Tam explained it thusly: “Extra Virgin Olive Oil….must pronounce this with a Rachel Ray raspy voice and plenty of enthusiasm. She coined the phrase!” My response: “Ah! I have never watched Rachel Ray. I did try one time but kept wanting to hit her with a fly swatter.”
All that being said, I get so many requests for my actual recipes that it seemed like this would be a good place to share. I have to warn you though that my cooking style is very much by the seat of my jeans and I just toss things into a pot until it looks, smells and tastes delicious. So my directions are not precise, but you will at least have a starting place.
